THE MIGHTY HONEY BEE Written by
Honey is "manufactured" in one of the world's most efficient factories, the beehive. Bees may travel as far as 55,000 miles and visit more than two million flowers to gather enough nectar to make just a pound of honey. The color and flavor of honey differs depending on the bees' nectar source (the blossoms). In fact, there are more than 300 unique kinds of honey in the United States, originating from such diverse sources as clover, eucalyptus and orange blossoms. In general, lighter colored honeys are mild in flavor; while darker honeys are usually more robust in flavor. |
Honey is primarily composed of fructose, glucose and water. It also contains other sugars as well as trace enzymes, minerals, vitamins and amino acids. In addition to gathering nectar to produce honey, honey bees perform a second but equally vital function: and that is pollination. About one-third of the human diet is derived from insect-pollinated plants, and honey bees are responsible for 80 percent of this pollination. Pollination is the fertilization of a flowering plant. It occurs when pollen is transferred from the anthers of a flower to the ovules of that or another flower. Honey bees are responsible for pollinating a variety of fruits, vegetables, legumes and more. Without the work of the bees we can’t eat. America is known as the bread basket of the world. When you buy honey that is not from the United States you prevent US Beekeepers from making a living. Without our bees our crops will not produce the food we need. Please remember to look for the source and country of origin on the honey label the next time you are choosing a jar of honey. It really does make a difference. |

Honey is among the indigenous ingredients that Ebert sources from local producers. In fact, Ebert has developed a working relationship with the beekeeper who supplies him with varietal honeys such as sage, mesquite and cotton. "Honey provides a smooth and cooling counterpoint to the spices and chilies that pervade my menu. I particularly like the subtle nuances of the varietal honeys. They infuse both flavor and a rich texture into my signature sauces." |
